Two nice salads

No. 1:

Ingredients:

Lettuce
Medium boiled eggs
Avocado
Cottage cheese
Baby tomatoes, halved

 

 

 

No. 2:

Ingredients

Quinoa
Rocket
Sweet potato (roasted)
Pistachio nuts (raw, not toasted)
Sweet chili sauce

Notes:

Drizzle the cubed sweet potato with butter and olive oil, season with ground cinnamon, nutmeg and ginger, and roast for 45 minutes. Allow sweet potato and quinoa to cool before assembling.
